Chengdu Sturgeon Enters Europe and North America, 7% of Global Caviar Supply Comes from Chengdu

For a long time, Russia and Iran have maintained the lion's share of the world's caviar supply. Yet, changes have been brewing in the market in recent years, as the quantity of made-in China caviar has climbed and now accounts for 1/3 of global total. "At present, annual production of caviar worldwide is estimated to be around 200 to 250 tons, and Chinese production has now reached 80 to 90 tons," explained Zhang Zhu, General Manager of Dujiangyan Rixing Sturgeon Technology Co.Ltd. The sturgeon population in the Caspian Sea has been dwindling since 1980 and is now an endangered species, meanwhile the volume of caviar coming out of Russia and Iran has dived has well. Rixing Sturgeon is the earliest company to begin artificial raising and harvesting of sturgeon in Sichuan Province, and in 2015 the company started to process and manufacture caviar. Today, Rixing Sturgeon Technology Co., Ltd operate fisheries in Pengzhou and Dujiangyan.
